凡诺尔公司使长期驯化的传统酿造米曲霉生产种曲孢子粉。米曲霉是一种安全的食品微生物,凡诺尔米曲霉高产蛋白酶、淀粉酶、谷氨酰胺酶和纤维素酶等,在发酵过程中可将食品中的营养成分充分分解。酶活力及孢子数均较高。
Fannuoers koji spores: Fannuoer has been using its original Fannuoers Aspergillus, a type of a filamentous fungus, to propagate koji spores. The species was considered to be a safe organism for production of food. Koji serves as a source of enzymes that break down (or hydrolyze/digest/split) nutrients in substrates into simpler compounds when making fermented foods. The enzyme produced by Fannuoers koji spores including protease, amylase, glutaminase etc. The enzyme activity and the spores counts are both very high.
应用范围:广泛应用于豆酱、酱油、豆豉等传统发酵食品生产过程中。
